These vegan sweet potato pancakes are soft, fluffy and full of flavor. Top them off with orange-infused maple syrup for a knock-your-socks off vegan breakfast!
Stir the sweet potato, milk, coconut oil and maple syrup together in a large mixing bowl.
Whisk the flour, baking powder, salt, cinnamon and nutmeg together in a separate, large mixing bowl.
Add the liquid ingredients to dry. Stir just until blended.
Coat a griddle or nonstick skillet with oil and place it over medium heat.
Pour ⅓ to ½ cup batter onto heated surface. Cook the pancake until browned on each side, about 5 minutes per side, flipping very gently between sides.
Serve with orange-infused maple syrup.
